3 cups Romaine lettuce, shredded
1/2 cup tomatoes, diced
1/2 cup green peppers, diced
3/4 cup canned black beans, rinsed and drained
4 tbsp salsa
1 ounce BAKED tortilla chips, crushed (about 12)
2 tbsp shredded fat-free cheddar cheese
Option: 1/4 cup fat free sour cream, 4 black olives, fat-free French dressing instead of salsa
Non-Vegetarian: Add 2 oz cooked chicken breast
Toss lettuce, tomatoes, peppers and beans with salsa. Top with chips and cheese.
