Toasted roast beef sandwich with salad
2 oz. lean roast beef 1 whole-grain hamburger bun 1 slice part-skim or fat-free mozzarella cheese 3 cups mixed salad greens 2 Tbsp. reduced-fat or fat-free salad dressing 1/2 cup shredded carrots 2 Tbsp. chopped walnuts Put roast beef on hamburger bun and top with cheese. Place under broiler or in toaster oven for 4 minutes, until cheese melts. Melt only lightly if using fat-free cheese. Serve with greens tossed with dressing, carrots and walnuts.
