| Grilled cheese with turkey and tomato

2 slices 100% whole grain bread 1 slice fat free cheddar cheese 2 oz. turkey (preferably NOT lunchmeat) 1 slice tomato Cooking spray 1/2 cup pea pods or frozen edamame soybeans (I buy these at Target in the frozen section, they are called Seapoint Farms Dora the Explorer lunch packages) 2 Tbsp. fat free ranch dressing Make sandwich with bread, cheese, turkey and tomato. Coat a skillet with cooking spray and toast sandwich for about 3 minutes on each side until bread is golden brown and cheese is melted. Serve with pea pods and ranch dressing. OPTIONAL: Mix the soybeans with 1/4 cup fat-free cottage cheese, 1/4 chopped cucumber, and 1/4 chopped tomato. Sprinkle with bacon-bit-style Salad Toppings and fat-free cheese and garlic croutons. (One of my favorite concoctions!)
